Ingredients: 
  • 2 pounds 
    Boneless Chicken (cut into bite size pieces)
  • 1/2 cup 
    Oliver Farms Pecan Oil* (divided)
  • Lemon (juiced)
  • 1 clove 
    Garlic (minced)
  • 1/2 cup 
    Chopped Pecans
  • 1/2 cup  
    Dried Cranberries
  • 1/2 cup 
    Scallions
  • splash 
    Chicken Broth
  • Salt and Pepper
Directions: 

IN A ZIP TOP BAG, COMBINE CHICKEN WITH ¼ CUP PECAN OIL, LEMON JUICE, GARLIC AND SALT AND PEPPER. REFRIGERATE AT LEAST 1 HOUR OR OVERNIGHT. DRAIN.

IN A LARGE SKILLET, HEAT REMAINING OIL OVER MEDIUM HIGH HEAT. ADD DRAINED CHICKEN, STIRRING TO PREVENT STICKING. COOK SEVERAL MINUTES THEN ADD REMAINING INGREDIENTS. LET SIMMER TO COMBINE FLAVORS THEN SERVE OVER RICE, POTATOES OR PASTA.
