Georgia Beef Kofta (Middle Eastern Meatballs)

Ingredients

Beef Kofta:

  • 1 lb ground beef
  • ½ yellow onion, grated
  • 2 cloves garlic, grated
  • 2 tsp lemon juice
  • 2 tbsp breadcrumbs
  • 2 tbsp olive oil
  • 1 tbsp Ras el Hanout or Berbere spice blend
  • ½ c + 2 tbsp blend of finely chopped soft herbs (parsley, cilantro, mint, or dill), divided
  • 2 ½ tsp kosher salt
  • Freshly ground black pepper

Yogurt Tahini Sauce:

  • ½ c yogurt
  • 2 tbsp tahini
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • Reserved finely chopped mixed herbs (2 tbsp)
  • Salt and pepper

Directions

Beef Kofta:

  1. Place ground beef in a large bowl with all other ingredients except salt. Mix all ingredients with clean hands or in a food processor until well combined and you have a paste. Add salt and mix well.
  2. Line a rimmed baking sheet with parchment. With your hands, roll meat mixture between your palms into 12 even meatballs, flattening them slightly. Place on the baking sheet and refrigerate kofta 1-12 hours or until ready to cook.
  3. Oil and preheat grill pan or gas grill, or prepare charcoal grill.  Grill meatballs over medium heat, turning once, until they reach an internal temperature of 165 degrees. Remove onto a plate and tent with foil to keep warm until ready to serve.

Yogurt Tahini Sauce:

Combine all ingredients in a small bowl. Refrigerate until ready to use.

Assemble:

Serve kofta with yogurt tahini sauce on grilled pita or toasted sandwich buns. Top with lettuce, sliced tomato, diced cucumber, and thinly sliced red onion. Enjoy!
