Georgia Peaches and Protein Salad
This salad is great for lunch or dinner. It's fresh, fruity, and fulfilling.

4 to 6 servings
Ingredients:
- 4medium fresh Georgia peaches, cubed (peeling optional)
- 2 cupsdiced cooked chicken, pork or beef
- 1cucumber, peeled and chopped (can substitute unpeeled zucchini
- 3 tablespoonsgrated Vidalia onion
- Basil Vinaigrette
- 1/3 cupvinegar
- 2 tablespoonssugar
- 1/4 cuppacked fresh basil, chopped
- 1/2 cupolive oil
- Salt and pepper to taste
- Mixed lettuces
Directions:
1. In a large bowl combine peaches, preferred protein, cucumber, and grated onion
2. Prepare the vinaigrette by combining remaining ingredients except lettuce in a blender, cover and process until smooth
3. Pour desired amount over meat/ peach mixture and refrigerate until chilled
