Ingredients: 
  • 2 cups 
    Diced pumpkin, seed and skins removed
  • 2 tablespoons  
    pecan oil, you may use canola or coconut oil
  • 1/2 teaspoon  
    pumpkin pie spice
  • 1 tablespoon 
    sugar
  • honey
Directions: 

Preheat oven to 375
In a bowl, toss pumpkin with pecan oil. Combine sugar and pumpkin pie spice in a seperate bowl then sprinkle over pumpkin, tossing to coat. Place on aluminum foil lined baking sheet. Bake for 15 to 20 minutes or until tender. Drizzle with honey before serving.
