Spicy Asian Chili Pork Noodles

Spicy Asian Chili Pork Noodles

Ingredients: 
  • 1 tbsp. 
    olive oil
  • 1 tbsp. 
    sesame oil
  • 2 lbs. 
    ground pork
  • ¼ cup 
    minced fresh ginger
  • 8 cloves 
    fresh garlic, thinly sliced
  • 2 tbsp. 
    sugar
  • 3 tbsp. 
    tomato paste
  • 6 Sprigs 
    cilantro + more for serving
  • 1/3 cup 
    hot chili paste (like sambal oelek)
  • ¼ cup 
    Tamari or soy sauce
  • ¼ cup 
    rice vinegar
  • 2 cups 
    water
  • 2 tsp. 
    fish sauce
  • 1 ½ lbs. 
    fresh ramen noodles or 1 lb. spaghetti
  • Salt
Directions: 

Heat oils in a large wide bottom pot over medium high heat. In batches, cook ground pork, breaking into about ½ inch chunks. Let pork brown well before turning. Remove cooked pork and set aside as you cook remaining pork. Add ginger, garlic, sugar and remaining pork to pot. Cook about 5 minutes then add tomato paste and cilantro sprigs. Cook about 2 minutes then add chili paste, tamari, vinegar, fish sauce and water.
Bring to a simmer, reduce heat to low, cook uncovered, stirring occasionally until slightly thickened. This should take 30-45 minutes.
Cook noodles in salted water until just under al dente.
Add to pot with sauce with a splash of pasta water.
Simmer about 1 minute. Remove cilantro sprigs if desired.
Garnish with cilantro leaves.
