Sweet Potato Salad with Cider Vinaigrette

Ingredients: 
  • 2 to 3 
    sweet potatoes, peeled and diced (about 4 to 5 cups)
  • 1/3 cup 
    dried cranberries
  • 1/3 cup 
    raisins
  • 1/2 
    scallions, chopped
  • 1/2 cup 
    plus more apple cider
  • 1/4 cup 
    vinegar
  • 3/4 cup 
    canola oil
  • 1/2 teaspoon  
    cinnamon
  • Salt and pepper
Directions: 

If possible start this the day before eating. Cook sweet potatoes in salted water until tender yet firm, about 10 minutes. Drain potatoes and chill overnight or at least one hour.
Combine raisins, cranberries, cinnamon and cider in a small sauce pan. Simmer 2 to 3 minutes to soften fruit.
Allow to cool then drain, reserving liquid.
Add more cider to reserved liquid to make ½ cup.
In a small bowl, whisk together cider, vinegar and canola oil. Combine chilled potatoes, scallions and reserved fruit in a bowl. Pour dressing over top and mix to combine.
Adjust seasoning and serve cold.
