Vidalia Onion and Chicken Casserole

Ingredients: 
  • Vidalia onions
  • 4 pounds 
    chicken
  • oil for frying
  • 2 cups  
    white rice
  • 8 oz 
    shredded cheddar cheese
  • JAMES’S DO ALL Shake or Rub Seasoning*
Directions: 

Preheat oven 350 degrees.
In a bowl, combine chicken and seasoning, tossing to coat evenly. Heat oil in a large skillet over medium high heat. Sear chicken on both sides in the hot oil. Remove from pan and keep warm. Add onions to same skillet, stirring until golden.
In a small ovenproof dish, layer cooked rice, chicken, onions then top with cheese. Bake 10 – 15 minutes or until cheese is melted.
